BAKED ALASKA JACK

Serves 2

Points per serving 2½

 

Preheat oven to Gas 5/190ºC/375°F.  Put 2 Jumbo Caramel Snack-a-Jacks onto a baking tray.  Lightly crush 100g raspberries and spread on top.  Add a few thinly sliced strawberries.  Whisk 2 egg whites until stiff, then whisk in 4 tsp heat stable sweetener to form stiff peaks.  Place 1 scoop of WWFH raspberry swirl iced dessert onto each portion then quickly pile the meringue on top, making sure there are no gaps between the meringue and the base.  Bake 6-8 mins until golden and serve.
