No Point Christmas Cracker Soup
Serves 4

3 veg stock cubes dissolved in 1.2 litres hot water
onion or leek, finely chopped
carrot, finely diced
courgette, finely diced
turnip, finely diced
90g mushrooms, sliced
2 tbsp soy sauce (optional)
chopped fresh chives or parsley to garnish
salt & pepper
Simmer onion or leek, carrot, courgette and turnip in the
stock for 15-20 mins until tender. Add mushrooms and cook 3-4 mins.
Add soy sauce and season to taste. Serve garnished with the fresh herbs.
