Butternut Squash Pie

Butternut Squash Pie
Serves 1

Core recipe


2½ pts per serving

150 g quorn mince
1 medium onion(s)
3 heaped tablespoon cooked frozen peas
1 medium carrot(s)
1 small can canned tomatoes
1 portion butternut squash (bns)
1 portion Oxo Vegetable Cubes
1 teaspoon yeast extract
1 tablespoon dried mixed herbs
1 teaspoon pepper
1 tablespoon Kraft Philadelphia Light with Garlic & Herbs


Spray a pan with fry light, add a chopped onion,cook until soft add quorn mince,and stock cube,pepper,herbs,tomatoes,a some boiling hot water,mix and leave to simmer for 30 mins.
meanwhile pop a butternut squah in the microwave or oven until very soft.

Preheat oven 180ÂșC Gas 4

When butternut squash is soft peel mash and add 1 tablespoon of the cream cheese.

Put the quorn mince in an oven proof dish add the mash and bake for 20 mins.
