Gingerbread People

Gingerbread People

Serves 12

Points per serving: 1½ (original points)

125 g flour, sifted
1 tsp cinnamon, ground
2 tsp ground ginger
1 tsp baking powder
1 medium egg, beaten
75 g light brown sugar
2 tbsp treacle, black
40 g very low-fat spread

In a large bowl, sift together the flours, cinnamon, ginger and baking powder. Beat together the egg, sugar, black treacle and low fat spread until smooth. Add the dry ingredients, a little at a time, mixing well after each addition to form a stiff dough.

Wrap in clingfilm and chill for 1 hour until firm.

Preheat the oven to Gas Mark 5/190°C/375°F. Line 2 baking sheets with non-stick parchment.

Divide the dough in 2 and roll out on a lightly floured surface to 8mm (1/3in) thickness. Cut gingerbread shapes from the dough with floured cutters (about 8cm (3 in) tall). Transfer to the baking sheets and decorate as desired with oven-safe decorations. Cook for 10-12 minutes until just firm. Carefully transfer to a wire rack to cool. Points don't include decorations.
