Jerusalem Artichoke and Leek Soup

Jerusalem Artichoke and Leek Soup 

Serves 4-6

2 leeks, sliced
1 onion, chopped
500g Jerusalem artichokes, peeled and chopped
1½ pints vegetable stock
1 tbsp fresh thyme

Fry onion and leeks until soft (add a little water if it starts to stick).

Add artichokes and stock and simmer for 20 minutes, or until artichokes are soft.

Puree in a liquidiser / food processor.
