SYN FREE COFFEE CAKE
5 scan
bran
3 eggs
Half cup
of sweetener (I only used 3 dessert spoons)
1-2
teaspoons of coffee (depends how strong u want cake to taste)
FILLING:
3
tablespoons quark
3 tbsp. of
sweetener
1 teaspoon
coffee mixed with tiny bit of hot water just to dissolve
1) Soak
scan bran in boiling water till soft, then drain and mash
2) Whisk
eggs, sweetener & coffee together in a bowl
3) Add the
mashed scan bran
4) Pour
into microwave dish/bowl
5) Cook in
microwave for about 6 mins, or 25 mins in 180% oven or gas mark 4
6) Put 3
tablespoons quark & sweetener in bowl and mix till blended,

Dissolve coffee in tiny bit of hot water. Add to the quark mixture & mix
till all coffee is blended
8) Spread
onto cake once cooled.
