Scan Bran and Weetabix Cake
1 Healthy Extra and 3 1/2 Syns for the entire cake
1 Weetabix and 4 Scan Bran
1 level tbsp mincemeat
1 level tbsp honey
1/2 tsp mixed spice
1/2 tsp cinnamon
3 Eggs
Soften Scan Bran with hot
water and crumble into the Weetabix. Stir in mince-meat, honey and spices.
Whisk eggs and add to the mixture.
Bake for 30—40 minutes in
a medium heat oven. Remove and serve.
Serving Suggestion: Try served warm with sweetened fromage frais!
