Eggs Baked in Roast Ham with Soldiers

Eggs Baked in Roast Ham with Soldiers

Serves 4
Points plan 3½ pts per serving (Original points)
Core: Count for bread or omit

1 tablespoon olive oil
8 thin slice ham, prepacked, or boiled ham (225g)
4 medium eggs
1 pinch salt, and freshly ground black pepper
4 medium slice bread, or toast, to serve

Preheat the oven to gas mark 6/200°C/400°F/ fan oven 180°C.

Grease 4 ramekins or individual ovenproof dishes with the olive oil. Line each of these with 2 slices of ham, so that there are no gaps.

Carefully crack an egg into each dish. Season with a little salt and pepper. 

Transfer to the oven and bake for 8-12 minutes, depending on how well you like your eggs cooked.


Serve with the bread or toast, cut into soldiers
