Couscous "Bread" Pudding

5oz dried couscous
160 g sweet mincemeat
2 eggs
3 level dessertsp sweetener or to taste
mixed spice
Place couscous in a bowl and add enough boiling water to
just cover it. Leave 5 mins.
Beat eggs and add to couscous with rest of
ingredients. Mix well and place into a micrwaveable dish. Level the
top.
Cook full power for 3-4 mins. Cool slightly and remove
from dish. Serve warm or cold.
