Chargrilled aubergine

*1 large
aubergine or 4-5 medium ones
*1/2 red onion finely chopped
*2-3 green chillies (depending on how hot you want)
*1/4 tsp garlic puree
*1/2 tsp tamarind paste or 1tsp lemon juice
salt to taste
*1Tbsp chopped fresh coriander leaves
*Char-grill aubergines until
soft. (Beware of explosion prick with fork to avoid.) Best time at the end of a
BBQ party. Or under a hot grill. Takes about 5-10 minutes, allow it to cool.
*Peel the skin. Remove stalk
*Mash this nicely with a spoon/fork into a pulp.
*Add all remaining ingredients and mix well.
*Serve with hot basmati rice (~3pts).
*Make a salad with julienned carrots (1) and 1/2 cucumber; add lemon juice,
salt; fresh ground pepper; coriander leaves.
Lovely meal for 3 points!!!!
You can also use this mix in
a wrap together with some lettuce and cucumber!
