Creamy Celery Soup

servings |  2

5 sticks of celery
one small onion
1 pint water
1 veg stock cube
Salt & pepper
1 tbsp 0% fat fromage frais
Parsley

Bring water to boil with stock cube. Add sliced celery, onion & parsley. Cover & simmer for 20 mins. Using food mixer blend until smooth. Return to pan, add fromage frais and season to taste. Simmer for 5 mins.  

Really yummy and creamy tasting! Can be refrigerated for up to 2 days.
