400g chopped tomatoes=0
points
pinch of dried herbs=0 points
1 tsp of extra virgin olive oil=1 point
1 clove of garlic=0 points
mushrooms= 0 points
225g pasta (weighed dry)=3 points
1 bay leaf=0 points
pinch of salt & pepper=0 points
1 green, red or yellow pepper(optional)=0points
Put oil in saucepan, add
sliced mushrooms and fry mushrooms, add crushed garlic clove, stir, add chopped
tomatoes, (add peppers here if required)stir it all around add bay leaf, salt
& pepper and herbs.
Stir until well mixed.
Put lid on saucepan. Put on low heat. Cook for 15 minutes, or until tomatoes
are reduced-your choice, but be sure to keep stirring throughout so not to burn
tomatoes.
Whilst cooking cook pasta I use Quick cook pasta.
Once pasta is cooked and drained put the sauce into pasta saucepan (should not
be on heat now) and give it a good stir and serve straight away.
I usually add with it some
grilled chicken breast (2 1/2 points) chopped up and serve with salad. It's
good for lunches when cold!
