Vegetable Stir Fry

 

Vegetable Stir Fry

1 Strip of thread egg noodles (5 points).
Spray Oil. (1 Point).
Chinese style oxo cube.
Root Ginger finely chopped - this is a must!
Mixture of any stir fry vegetables cut into similar sized pieces ie:
Button Mushrooms
Courgettes
Carrots
Spring Onions
Peppers
French Beans (boil these for 5 minutes first to soften slightly).

Prepare all the vegetables first.
Put a pan of water on to boil with the oxo cube added - use just enough water to cover the noodles.
Heat spray oil in a wok until hot and begin to stir fry the vegetables.
Once they have started to cook, put the noodles into the boiling water to soften (approx 2 minutes).
Drain the noodles and top with the stir fry vegetables.
At this stage add soy sauce if required.

 

I have this meal a couple of times a week - it is very tasty and satisfying and doesn't use a lot of points. I never want the meal to end! And it works at shifting the weight!
