Cheesy bean quesadillas

2 small (6") soft tortillas
25g mature half fat cheddar, grated (Sainsbury's one is really mature tasting - like real cheese)
thinly sliced red onion
thinly sliced red chilli
fresh coriander
1/4 x 420g can mixed pulses in mild chilli sauce

Lay 1 tortilla flat on a board. Scatter with the cheese, onion, chilli and coriander. Spoon the beans on top, but don't push them right to the edge. Top with the second tortilla. Dry fry in preheated frying pan over a medium heat for 1 1/2- 2mins each side, until slightly browned and the cheese has melted. Cut into wedges and serve with salad.  

This is yummy and very quick. I use Sainsbury's own tortillas, which are 6-inch diameter, and you get 2 for 2.5pts - if you use bigger tortillas you will need to adjust points (also might need more beans, cheese etc.).
Nice with 1 tbsp half fat creme fraiche 1/2pt on top
