5 oz damsons

sweetener to taste

1 egg white, beaten until stiff

Stew damsons in water until mushy. Pour through sieve over a basin rubbing pulp through. Add sweetener to taste, and while puree is still hot, fold in stiffly beaten egg white.

Eat at once, or chilled
