Couscous salad

100g cous cous
180ml water
tbs tom puree
1 veg stock cube
finely cubed salad veg, ie peppers, cue, tom, red onion
Bring water to the boil, stir
in tom puree & stock cube, add cous cous, stir, remove from heat.
Add salad veg and leave to stand for 10 mins.
Return pan to low heat and fluff up the cous cous with fork.
Remove from heat and chill.
Perfect for packed lunch or
picnics
