Leek & Cheese Pie
Serves 2
4 Leeks cut into 20mm pieces
45g Mozzarella cheese, cut into small pieces
(1Hea)
45g Low Fat Cheddar Cheese, grated (1Hea)
400g Baked Beans
2 Eggs
Cut the leeks and part cook for 5 mins, drain
and in an oven-proof dish, sprayed in Fry Light, place the leeks on end to
cover the dish, cover with the grated cheddar cheese then the Mozzarella. Cook
for 20-25 mins until the cheese has melted. Plate up with baked beans & a
fried egg.
