Rib Sauce

Fry Light
1 finely chopped onion
1 stick celery, finely chopped
400g can chopped toms
1 level tbsp tomato puree
1/2 tsp mustard powder
1 tbsp worcestershire sauce
2 tsp fresh lemon juice
artificial sweetener to taste
salt & pepper

Heat a pan sprayed with fry light, saute the onion &
celery over a
low heat for 5 minutes. Stir in the tomatoes & bring
to the boil,
reduce the heat and simmer for 5 minutes. Add the tomato
puree, mustard
powder, worcestershire sauce & lemon juice, simmer
over a low heat
for 20 minutes, stirring occasionally until thickened.
Stir in the
artificial sweetener, season to taste.
Either leave as a chunky sauce or blitz with a hand
blender for a smooth sauce.
This could be used as a sauce to go with pork tenderloin
