Lemon Cheesecake

Ingredients for the Base
2 Apples, Peeled and grated (0pp)
80g Oats (8pp)
Juice and rind of 1 Lemon (0pp)
1 Egg (2pp)
2 Tbs Sweetener (0pp)
Ingredients for the Topping
1(250g) tub of Lemon Quark (5pp)
4 Tbs of fat free Fromage Frais (2pp)
1Tbs Sweetener (if needed) (0pp)
Grated Rind of 1 Lemon (for decoration) (0pp)
Pre-heat oven on gas mark 4
Peel and grate the Apples
Beat the Egg
Measure out the oats
Instructions for the Topping
Mix quark and fromage frais, lemon flavouring and
sweetener to your own taste.
Spread the cheese mixture over the base then decorate top
with grated lemon rind, place back in the fridge until set then ENJOY!!
