Lemon Cheesecake

Lemon Cheesecake  

Serves 8

Ingredients for the Base

2 Apples, Peeled and grated (0pp)

80g Oats (8pp)

Juice and rind of 1 Lemon (0pp)

1 Egg (2pp)

2 Tbs Sweetener (0pp)

 

Ingredients for the Topping

1(250g) tub of Lemon Quark (5pp)

4 Tbs of fat free Fromage Frais (2pp)

1Tbs Sweetener (if needed) (0pp)

Grated Rind of 1 Lemon (for decoration) (0pp)

 

Pre-heat oven on gas mark 4

Peel and grate the Apples

Beat the Egg

Measure out the oats

Place all the ingredients add sweetener and mix together, level out and bake in the oven for about 20 minutes or until golden brown and crispy, take out and let cool, once cooled put in the fridge to harden up.

Instructions for the Topping

Mix quark and fromage frais, lemon flavouring and sweetener to your own taste.

Spread the cheese mixture over the base then decorate top with grated lemon rind, place back in the fridge until set then ENJOY!!
