GRILLED PAW
PAW WITH HOT RUM FRUITS

Points per
serving 4
1 large paw
paw (papaya) halved and deseeded
1 kiwi fruit,
peeled and chopped
½ med mango,
peeled and chopped
12 seedless grapes,
halved
2 tbsp rum
2 tbsp
unrefined demerara sugar
1 tbsp flaked
almonds
Preheat
grill to hot.
Put papaya
halves, cut side up, onto the grill pan and fill with kiwi fruit, mango and
grapes. Sprinkle with 1 tbsp rum per half and scatter the sugar over.
Grill until
the sugar begins to bubble, then sprinkle with almonds and continue to grill for
a few moments until they begin to brown.
Set aside a
few mins to cool slightly then serv & eat whilst warm.
