Courgette Soup

Courgette Soup

 

Serves 4/ prep and cooking time = 30 mins

Points per recipe= 2

Points per serving  = 4

 

1kg courgettes, trimmed and sliced

450ml veg stock, made with veg stock cubes

1 pint skimmed milk

grated nutmeg

salt n pepper

 

1. Place the courgettes and veg stock into a large pan and cook until the courgettes are soft( approx 20-25 mins).

2. Pour the soup into a food processor or blender and process until smooth. Return the soup to the pan,add the milk slowly and reheat. Do not allow to boil. Add nutmeg, salt n pepper to taste and serve.
