QUICK LAMB CURRY

 

QUICK LAMB CURRY

 

Serves 4

Points per serving: 6

 

spray oil

480g lean lamb steaks, cubed

1 onion, chopped

2 garlic cloves, crushed

2 tbsp Balti curry paste

2 x 400g cans chopped tomatoes

1 lamb or chicken stock cube

1 courgette, cut into chunks

½ small cauliflower, broken into florets

90g green beans, sliced

1 tbsp chopped fresh mint

salt & pepper

4 mini naan bread, to serve

 

Spray a large pans with 2-3 squirts oil.  Heat for a few moments, then add the lamb a handful at a time to seal and brown it.

 

Add onion & garlic, cook and stir for 2-3 mins, then add the curry paste.

 

Tip in the tomatoes, then add the stock cube, courgette, cauliflower and green beans.  Heat and simmer for 10 mins
