Chilli Rice & Chickpeas
1/2 a red onion, chopped
1 clove garlic, peeled and chopped
1/2 a teaspoon ground allspice
1/2 a red pepper, deseeded and chopped
1 fresh red chilli, deseeded and chopped(less if you prefer)
1/2 can kidney beans
1/2 can chickpeas
1/2 can chopped tomatoes
2oz rice(dry weight)
3 fl oz veg stock
salt & black pepper
in a heavy , lidded, non-stick frying
pan.......dry-fry onion and garlic til soft. add allspice and stir, then add
all the remaining ingredients, cover and simmer for 30 mins or until rice is
cooked but the rest is still moist. eat!! lol.
