large cauliflower, broken into large florets

cloves of garlic, crushed

courgettes, sliced

tbsps of tomato puree

bay leaf

tsp dried oregano

tsp of cumin
50ml
red wine vinegar
250ml
veg stock
Salt
n pepper
Pre-heat
the oven to gas mark 4/ 350f/ 180c.
Place
all the ingredients into a flame proof casserole and bring to the boil. Cover
and bake for 1 hour.
