Greek Potato Stew


Greek Potato Stew

Serves 4
Points per recipe = 6 1/2 full choice
Points per serving = 1 1/2 full choice

4 small onions, quarted
350g button mushrooms, halved
600g large potatoes, cut into chunks
a large cauliflower, broken into large florets
4 cloves of garlic, crushed
4 courgettes, sliced
2 tbsps of tomato puree
1 bay leaf
1 tsp dried oregano
1 tsp of cumin
50ml red wine vinegar
250ml veg stock
Salt n pepper

Pre-heat the oven to gas mark 4/ 350f/ 180c.
Place all the ingredients into a flame proof casserole and bring to the boil. Cover and bake for 1 hour.
