Roast Parma Cod

Serves 2

450gm pasatta or pureed tomatoes
450gm cod
55gm jamon or parma ham or use lean bacon, turkey rashers, or ham
Quark or use extra light philly (garlic & herb)
1 clove garlic, crushed
1 shallot


Mix quark and herbs of your choice. Cut fish into 2 equal size pieces or use 2 tail ends. Sandwich together with the quark and then wrap the ham around it to hold it all together.


I had to dry fry mine but it should really be done in an oven.

Make sauce with chopped shallots, garlic and tomato to serve with the fish.
