Pink Fizz Jellies


Pink Fizz Jellies

Serves 6

Points per serving  1½pts  (both plans)

150ml boiling water
2 sachets powdered gelatine
3 tbsp powdered sweetener
2 tbsp sugar free blackcurrant cordial
750 ml bottle sparkling wine
175g strawberries
mint leaves for garnish

Pour the boiling water into a very large jug and sprinkle in the gelatine, stirring to disperse.  Stand for a few minutes, stirring occasionally to give a clear liquid.

Stir in the sweetener and cordial.  Slowly add the sparkling wine, letting the bubbles subside as you add it.

Pour the mixture into 6 champagne flutes or wine glasses.  Add a whole strawberry to each glass.  Transfer to the fridge and chill until set, about 2 hours.

Serve the desserts, decorated with sliced strawberries and mint leaves.

Bubbles form as the jelly sets making it look really pretty.  Don;t forget they are alcoholic!
