Ruby Red Casserole

Full Choice ½ pt per serving

3 medium onions, chopped
2 fennel bulbs, chopped
675g red cabbage, shredded
1 large Granny Smith apple, (235g) peeled, cored & chopped
300ml low fat natural yogurt
1 tsp salt
1 tbsp horseradish sauce
1 tsp pepper or to taste

Preheat oven to 150ºC/Gas 3

Combine the veg in a large casserole.

Mix yogurt, horseradish, salt & pepper and stir through the veg.

Cover & bake for 1½ hours, stirring occasionally.

Serve hot.
