Plums and
Pears Cooked with Blueberries

Sliced pears
and plums are simmered with frozen berries to make a wonderful warm fruit
salad.
4 medium
pear(s), dessert, peeled, cored and sliced
6 medium plum(s), halved
1 medium orange(s), finely grated rind and juice
225 g blueberries, frozen, (8 oz), or forest fruits
1 tablespoon artificial sweetener, powdered, or to taste
6 tablespoon low-fat plain fromage frais
1/2 teaspoon vanilla essence

Put the pears
into a saucepan with the plums, half the orange rind, orange juice and frozen
berries. Add 3 tbsp cold water.
Heat until
almost boiling, then cover and simmer gently until the pears and plums are
tender, about 10 - 15 minutes. Add powdered sweetener, to taste. Spoon into 4
serving dishes to cool slightly.
Mix the
fromage frais with the vanilla extract and remaining orange rind. Serve each
portion of fruit topped with the flavoured fromage frais.
Use frozen
summer berries or raspberries if you prefer
