STEAMED AUBERGINE

1 AUBERGINE
DRESSING:
2 TBSP SOY SAUCE
1½ TBSP SWEET CHILLI SAUCE
JUICE AND RIND OF ½ LEMON
1 TSP SESAME OIL
FRESH CORIANDER
FRESH BASIL
FRESH MINT

CUT THE AUBERGINE IN HALF LENGTHWAYS. PUT CUT SIDE UP INTO STEAMER AND COOK FOR 10 MINS.
MEANWHILE MIX ALL DRESSING INGREDIENTS TOGETHER. WHEN THE AUBERGINE IS COOKED, CUT IT INTO CUBES AND MIX WITH THE DRESSING
