Potatoes baked with tomatoes and basil

Serves 3

4 pts per serving

No count  1 pt per serving

900g potatoes
450g tomatoes
Basil leaves
1 onion chopped
1 clove of garlic chopped
A drizzle of olive oil (1 tbsp)
salt and pepper

Pour boiling water over the tomatoes, leave for a minute and then take the skins off. Then chop the flesh small. Slice the potatoes thinly. In a dish arrange first a layer of sliced potato, then chopped garlic and onion, the salt and pepper, then tomatoes, and then the basil leaves.
Continue until you have used up all the ingredients. Then drizzle a little oil over the top and bake for approx. 1 hour at 190 degrees or until poatoes are soft
