SWEET AND SOUR RED CABBAGE


SWEET AND SOUR RED CABBAGE

Serves 4 large portions
1 pt per portion

100g chopped red onion
900g coarsely shredded red cabbage
salt
40g sultanas
200g peeled & chopped cooking apple
25g soft brown sugar
1 tsp ground cinnamon
100ml water
3-4 tbsp cider or rice vinegar

Spray a large non stick pan with spray oil and toss in the onions and cabbage.
Add salt, stir, cover and cook over low heat for 2 mins.
Add sultanas, apples, sugar, cinnamon and water.  Bring to simmering point, cover and cook for 45 mins, stirring once in a while.  Stir in the vinegar to taste.  Raise the heat and cook on high for 2 mins, to reduce the cooking juices.

As a contrast, serve with steamed green cabbage.
