250g low fat cottage cheese
3 eggs
onion
pepper
mushrooms
sweetcorn

Chop onions and put on base of dish
Fold eggs into cottage cheese
Add to dish
Chop up vegs and put on top
Cook for pprox. 30 to 45 minutes gas mark 6

You add whatever vegetables you like to the quiche.
Smoked mackerel also goes well
