Rhubarb & Amaretti Pots

Full Choice 3 pts per serving

No Count  1½ pts per serving

400g fresh rhuabrb, trimmed and cut into 2.5cm (1") chunks
3 tbsp sugar (2½ pts)
110g Fox's officially low fat amaretti biscuits, crumbled
4 tbsp amaretto liqueur (2½pts)
500g 0% Total Greek Yogurt
50g Pistachio nuts, shelled & roughly chopped (3pts)


Preheat oven to Gas 5/180ºC

Put the rhubarb on a roasting tray & sprinkle with sugar.  Roast for 10 mins, until just soft and caramelised

Divide the crumbled amaretti between 4 wine glasses and add 1 tbsp amaretto to each.  Top with a spponful of yogurt then rhuabrb and repeat finishing with a sprinkling of nuts.
