Rosemary
Baked Mackerel
Core
Serves 4
1 small
onion, thinly sliced
1 dessert
apple, cored and thinly sliced
4 medium
tomatoes, skinned & chopped
300ml fish
stock (or chicken/veg)
sprig
rosemary
dash
Worcestershire sauce
4 x 225g
mackerel fillets
Preheat oven
to Gas 5/190ºC
Put onion,
apple, tomatoes and stock in a pan and add the rosemary and worcestershire sauce.
Season and bring to the boil. Cover and cook for 10 mins.
Fold the fish
fillets in half, end to end with skin side out and put into an ovenproof dish.
Pour the sauce over, cover with foil and bake for 20-25 mins.
Serve with
rice and a salad.
