Minted Lime Carrots

Serves: 4
1 lb. carrots\grated, peeled and shredded
1 tsp. dried mint, or 1/3 cup fresh, chopped
2 Tbsps. lime juice
1/4 tsp. salt (optional), or to taste
Combine all ingredients and pepper to taste in a bowl. Cover and chill at least 30 minutes before serving.
You can add 2 teaspoonfuls of olive oil for ½point a serving
