basmati rice
4
garlic cloves, crushed
2.5cm
(1") piece fresh root ginger, grated

cardamom pods crushed slightly

tsp ground coriander
1
tsp chilli powder
½
tsp turmeric

heaped tbsp frozen peas
low
fat cooking spray
400g
zero pointed veg, diced or sliced finely eg red & green peppers,
cauliflower, mushrooms

heaped tbsp sultanas
Put
the rice,garlic, ginger and all the spices into a pan and cover with
water. Heat until boiling and cook for 10 mins. Add the peas after 7
mins.
Heat
a non-stick pan and spray with the cooking spray. Stir fry the vegetables
for 3-4 mins.
When
the rice is cooked, rinse with boiling water, and drain it and transfer it to a
serving dish. Cover the dish with a clean dry tea towel and set aside for
3-4 minutes. Stir the veg and sultanas into the rice, season and serve.
