Sauteed Red Cabbage with Pears


Sauteed Red Cabbage with Pears

Adapted from a Rick Stein recipe.

Serves 4

Full Choice 1 pt per serving
No Count   ½ pt per serving  (butter & sugar)

15 g half-fat butter (1pt)
700 g red cabbage, thinly sliced
1 small onion, chopped
2 tbsp light soft brown sugar(1½pts)
6 tbsp cider vinegar
pinch ground cinnamon
pinch ground cloves
¼ tsp cayenne pepper
2 firm ripe pears, cored and thinly sliced (2pts)

Melt the butter in a large pan and add the cabbage and onion.  Fry gently for a few inutes before adding the other ingredients except the pears.

Cook on medium heat for 10-12 mins, until the cabbage is quite tender.  Add the pears and cook for a further 2 mins, until tender but not broken up.  Season well.
