BAKED SALMON
WITH SWEET GINGER

Serves 1
Sweet &
sour flavours enhance this quick and easy fish dish. The fish can be
cooked under the grill for 6-8 mins depending on the thickenss of the fish.
2 tsp lemon
juice
1 tsp light
muscovado sugar (½ pt)
¼ tsp fresh
ginger, finely chopped
1 tsp chopped
fresh dill
1 tsp light soy
sauce
1 salmon
steak
salt &
pepper
Preheat oven
to 200ºC/400ºF/gas 6
Mix the lemon
juice, sugar, ginger, dill & soy to form a glaze & season with salt
& pepper.
Place the
salmon in the bowl and toss in the glaze.
Transfer the
salmon to an ovenproof dish and pour the marinade over.
Bake 8-10
mins until just cooked.
Serve with
couscous, rice or potatoes & veg.
