Peppered Fillets of Plaice Wrapped in Lettuce

No Count Recipe

Serves 1

¼ tsp black peppercorns
¼ tsp green peppercorns
50g extra light philadelphia
½ tbsp fresh parsley, chopped
1 plaice fillet, skinned
4 large lettuce leaves.

Lightly crush the peppercorns, with the flat of a knife or in a pestle & mortar.  If useing canned green peppercorns, just chop roughly. 

Beat the peppercorns into the philly with the parsley and salt.

Spread the cheese over the skinless side of the fillet and roll up lioke a swiss roll.

Blench the lettuce leaves in boiling water for 30 secs.  Drain and run under cold water to refresh.  Carefully spread the leaves out separately, on a board or clean work surface.  Wrap the plaice roll in lettuce leaves, one by one enclosing it completely.  You may not need all of the leaves.

Line a steamer basket with foil and lay the lettuce parcel on it.  Steam for 5-7 mins until a skewer slips easily through the centre of the roll.

Serve hot or cold.
