Sardine Baked

2 large
onions
200g can
chopped tomatoes
1 clove
garlic
pinch mixed
herbs
¼ green
pepper, chopped
1 x 120g tin
sardines in tomato sauce
Peel the
onions and place in a saucepan, cover with water and boil 20 mins.
Place
tomatoes, garlic and herbs in another pan and cook for 20 mins until thickened.
Drain onions,
leave to cool then remove the centre of each onion, leaving 3 layers as an outside
wall.
Chop the
onion centres and mix with the pepper, tomato mixture and sardines.
Place onion
shells into an ovenproof dish, spoon sardine mixture into the onion shell and
around the sides. Cook for 30 mins, Gas 6/200ºC/400ºF
