Thai-flavoured Fish Parcels

Full Choice 1½ pts per serving

frylight
1 leek, washed thoroughly and finely sliced
2 bulbs bok choy, finely sliced or ¼ Savoy cabbage
4 plaice fillets, skinned & cut in two lengthways
1 tbsp fish sauce
1 lime, zest & juice
1 mild chilli, seeds removed, finely chopped
1 tbsp light soy sauce
15g pack fresh coriander, chopped

Preheat oven to Gas 6/200ºC/400ºF

Heat a non-stick pan aprayed with frylight and cook leek and bok choy until beginning to wilt.  Cut 4 large squares of foil.  Divide veg between the foil squares.

Lay 2  pieces fish on each pile of veg.

Mix fish sauce, lime zest & juice, chilli & soy sauce and divide between the foil parcels.  Seal the foil and place on baking tray.

Cook for 10 mins.  Let parcels sit for a minute or two then scatter each with coriander.  Serve with noodles
