175g rice (any kind)
low fat cooking spray
1 onion sliced thinly
2 garlic cloves crushed
125g mixed veg
50g frozen peas
225g frozen prawns
1 tbsp of mild curry powder
1. Cook the rice in boiling water for about 12 mins until tender
2. Meanwhile, in a non stick frying pan or wok spray low fat cooking spray. Add onions, garlic and cook for 2 mins
3. Add the frozen mixed veg, peas, curry powder and prawns and cook for 5-6 mins
4. Drain the cooked rice thoroughly, add to the pan cook for a further 2 mins
You can add 225g of chicken if prefered and the points will remain the same
