2 small cod
fillets (200g each) cut into 4 pieces
sprinkling of
chilli powder
salt &
pepper
Sauce:
low fat
cooking spray
1 medium
onion, chopped
2 garlic
cloves, crushed
5cm (2")
piece fresh root ginger, grated
1 medium
green chilli, deseeded & chopped finely
2 tsp chilli
powder
1 tsp ground
coriander
½ tsp cumin
seeds
200ml fish
stock
Preheat grill
or griddle.
Season the
fish with a sprinkling of chilli powder, salt & pepper.
Cook under
the grill for 10-15 mins depending on the thickness of the fillet, turning once
during cooking.
Meanwhile,
heat a non-stick pan and spray with the cooking spray. Stir fry the onion
for about 5 mins until soft.
Add the rest
of the sauce ingredients to the pan and heat gently until simmering, then cover
with a tight fitting lid and cook for 5 mins more.
Remove the
skin from the fish and discard. Gently mix the fish into the sauce and
serve immediately.
