Basque Style Cod

Serves 4

Full Choice 3 pts per serving

4 x 175g cod fillets
1 tbsp lemon juice
low fat cooking spray
4 red onions, finely sliced
50g mushrooms, sliced finely
2 garlic cloves, crushed
2 tsp tomato puree
1-2 tps smoked paprika
pinch mace
250ml red wine (2½pts)
2 level tsp cornflour (½pt)
salt & pepper
lemon wedges to garnish

Preheat oven to Gas 4/180ºC Fan oven 160ºC.

Place fish in an ovenproof dish, sprinkle over some seasoning and the lemon juice. Cover & poach in the coven for 15mins.

Meanwhile spray a pan with low fat spray and cook the onions, mushrooms and garlic until softened.  Add the tomato puree, paprika and mace, stir in the wine and 125ml water and simmer for 10 mins.

Mix the cornflour with a little water and add to the pan, stirring until the sauce has thickened.

Remove the fish from the oven and pour the sauce over the fish.  Return to the oven for 10 mins.

Serve garnished with lemon wedges.
