TOMATOES ON
PESTO TOAST

serving 2½
1 tsp
sunflower margarine
2 tsp pesto
sauce
1 large ripe
tomato
1 slice
wholemeal or granary bread
salt &
freshly ground black pepper
Preheat the
grill. Mix the pesto and marg together.
Halve the
tomato widthways and season well. grill for 3 mins on the cut side only,
until lightly browned.
Meanwhile
lightly toast the bread on both sides.
Spread half
the pesto mix on the toast, top with the tomato halves and divide the remaining
pesto between the tomatoes, spreading carefully with a knife. Scatter
with freshly ground black pepper and serve.
