Sunshine Turkey Salad


Sunshine Turkey Salad

Serves 6

Points per serving 1½
No Count must count points for sesame seeds or omit

2 tbsp lime or lemon juice
120g red or green seedless grapes, halved
1 small banana, sliced
1 medium papaya, peeled seeded and chopped
10cm (4") piece cucumber, chopped
480g cooked turkey, cut into strips
150ml plain yogurt
1 tbsp chopped fresh mint
salt & pepper
mixed lettuce leaves
2 tsp sesame seeds, toasted to garnish

Put lime or lemon juice into a large bowl and add all the fruit and cucumber, tossing gently to coat.  Add the turkey and season to taste.

Mix the yogurt and mint and season to taste.  Chill the salad and dressing separately until ready to serve.

Serve the salad with mixed leaved, drizzle with dressing and sprinkle with toasted sesame seeds.

Tip: If you prefer, use an apple instead of a papaya
