Mexican Style Coleslaw


Mexican Style Coleslaw

Serves 4

Full choice 1 pt for the whole recipe

½ red cabbage
1 small onion
1 small red pepper
100g radishes
2 tbsp chopped fresh coriander
4 tbsp very low fat fromage frais
a few drops Tabasco to taste
1 lime
salt & pepper

Remove central stalk from red cabbage and finely shred the leaves.  Finely chop the onion pepper.  Grate the radishes.  Place all in a bowl with the chopped coriander.

Mix fromage frais with the Tabasco sauce.  Finely grate the lime rind and add to the fromage frias with the juice.  Mix well.

Stir the chilli dressing into the veg and mix well.  Cover and chill for 30 mins before serving.
