GAMMON & BANANA SALAD


GAMMON & BANANA SALAD

Serves 4

175g shredded iceberg lettuce
175g lean gammon, grilled & chopped
200g canned pineapple chunks in juice, drained
275g new potatoes, scrubbed, cooked & halved
1medium banana, sliced
salt & pepper

Dressing
150g low fat natural yogurt
1 tbsp fresh chopped chives

Arrange the lettuce on serving plates.

Put the remaining ingredients into a bowl and mix gently.

Mix the yogurt & chives and pour over the salad.  Toss gently and serve over the lettuce.
