Moroccan Orange and Mint Sorbet


Moroccan Orange and Mint Sorbet

Serves 4

1½ pts per serving both plans

2 orange, mandarin or mint tea bags
4 mint sprigs, plus extra to decorat
300ml boiling water
50g caster sugar
600ml unsweetened orange juice

Put the fruit or mint tea bags into a jug and add the boiling water.  Allow to infuse for approx 5-6 mins then remove and discard the tea bags.  Stir in the sugar and cool.

Add the orange juice then chill in the fridge.  transfer to a 1 litre rigid freezer container, freeze for 1½ hours, then remove, and stir well to break up the ice crystals.  Freez for 3-4 more hours, stirring every hour as before.  Finally transfer to a freezer container and freeze until required.

Before serving, allow to soften slightly by placing in the fridge for about 20 mins.  Serve in chilled glasses, decorated with mint sprigs.
