Cucumber & Red Onion Salad

A lovely
accompaniment to grilled meat or chicken.
Serves 4
2 cucumbers
2 red onions
2 tbsp
chopped fresh mint
2 tbsp fruit
vinegar or white wine vinegar
2 oranges
salt & pepper
Using the
coarse side of a grater, grate both the cucumbers and red onion into a
bowl. Add the mint and vinegar and season well.
Using a
serrated knife, cut away the peel from the oranges and segment the fruit over
the bowl to catch any juice.
Mix well and
spoon into a serving dish. Serve straight away.
